Ingredients

¾ cup unsalted butter, softened

1 cup brown sugar, packed

¼ cup molasses (preferably dark)

1 large egg

2 ¼ cups all-purpose flour

½ teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground cloves

½ teaspoon salt

½ cup granulated sugar (for rolling)

Optional: ½ cup chopped walnuts or pecans for added texture

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line baking sheets with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-5 minutes. Add the molasses and egg, and beat until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt until evenly blended.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring just until you see no more flour streaks. If you're adding walnuts or pecans, fold them in gently.

Form the Cookies: Using a cookie scoop or your hands, form tablespoons of dough into balls. Roll each ball in granulated sugar to coat.

Bake: Arrange the sugar-coated cookie dough balls on your prepared baking sheets about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers remain soft. They'll continue to firm up as they cool.

Cool Down: Once baked, let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Serve and Enjoy: Enjoy these delicious bakery-style molasses cookies fresh out of the oven or store them in an airtight container for up to a week.
