Bakery Style Molasses Cookies

Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1/4 cup unsulfured molasses

2 1/4 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup sugar (for rolling cookies)

Instructions
 

Preheat your oven to 350F (175C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Beat in the egg and molasses, mixing until fully combined.

        In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!

            Chill the dough in the refrigerator for about 30 minutes for easier handling.

              Once chilled, scoop out tablespoons of dough and roll them into balls. Roll each ball in granulated sugar to coat.

                Place the rolled cookies onto the prepared baking sheets, leaving a couple of inches of space between each cookie.

                  Bake in the preheated oven for 10-12 minutes, until the edges are set and the tops are slightly cracked.

                    Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
