Balsamic Glazed Caprese Chicken

Ingredients
  

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved

1/2 cup fresh basil leaves

1/2 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Optional: balsamic reduction for drizzling

Marinate the Chicken: In a mixing bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes, or better yet, up to 2 hours in the refrigerator.

    Preheat the Grill: Preheat your grill or a grill pan over medium-high heat.

      Grill the Chicken: Remove the chicken from the marinade, shaking off any excess. Place the chicken on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).

        Prepare the Topping: While the chicken is grilling, combine the halved cherry tomatoes and mozzarella balls in a bowl. Add a few torn basil leaves, a drizzle of olive oil, and a pinch of salt and pepper. Toss gently to combine.

          Glaze the Chicken: During the last few minutes of grilling, brush some of the remaining marinade over the chicken to create a delicious glaze.

            Assemble the Dish: Once the chicken is grilled, remove it from the grill and let it rest for a few minutes. Top each chicken breast with the tomato and mozzarella mixture, and garnish with additional fresh basil.

              Serve: For an extra touch, drizzle the dish with balsamic reduction if desired. Serve with a side salad or choice of your favorite vegetable.
