Ingredients
  

2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 bell pepper (red, yellow, or green), sliced

1 cup broccoli florets

¼ cup balsamic vinegar

2 tablespoons olive oil

2 tablespoons honey or maple syrup

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides. Set aside.

    Make the Balsamic Glaze: In a small bowl, whisk together the balsamic vinegar, olive oil, and honey (or maple syrup). Set aside.

      Cook the Chicken: Heat a large skillet over medium heat. Add a splash of olive oil and when hot, add the chicken breasts. Cook for about 5-6 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add cherry tomatoes, zucchini, bell pepper, and broccoli. Stir-fry for about 5-7 minutes until the veggies are tender-crisp.

          Combine and Glaze: Return the chicken to the skillet. Pour the balsamic glaze over the chicken and veggies, allowing everything to simmer for an additional 2-3 minutes until the sauce thickens slightly and coats the chicken and veggies evenly.

            Serve: Plate the chicken and veggies, drizzling any remaining balsamic glaze over the top. Garnish with fresh basil or parsley if desired.
