For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup sour cream

2 ripe bananas, mashed

For the toppings:

¾ cup strawberry sauce

½ cup chocolate sauce

¼ cup crushed pineapple, drained

Whipped cream

Chopped nuts (e.g., walnuts or pecans)

Maraschino cherries for garnish

Instructions
 

Prepare the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove and let cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream. Finally, fold in the mashed bananas until just combined.

      Assemble the cheesecake: Pour the cheesecake filling over the cooled crust and spread it evenly. Tap the pan on the counter gently to release any air bubbles.

        Bake the cheesecake: Place the springform pan in the preheated oven and bake for 55-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.

          Chill: Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

            Top the cheesecake: Before serving, drizzle strawberry and chocolate sauces over the cooled cheesecake. Top with crushed pineapple, a generous dollop of whipped cream, and sprinkle chopped nuts. Finally, crown your creation with maraschino cherries.
