Ripe bananas are the star of this cake, providing natural sweetness and moisture. When choosing bananas for this recipe, look for those with a few brown spots on the skin, as these indicate optimal ripeness. The sugars in ripe bananas intensify during the baking process, resulting in a rich, sweet flavor that pairs beautifully with the cake's caramel topping. Additionally, their soft texture caramelizes beautifully during baking, enhancing the overall flavor profile and ensuring that each slice is packed with tropical goodness.

Ingredients

3 ripe bananas, sliced

1/4 cup unsalted butter

1/2 cup brown sugar

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup buttermilk (or regular milk with 1/2 tsp vinegar)

2 large eggs

1 teaspoon ground cinnamon (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Create the Topping: In a small saucepan over medium heat, melt the butter. Once melted, add the brown sugar and vanilla extract, stirring until combined and slightly bubbly. Remove from heat and pour this mixture into the bottom of the prepared cake pan.

Arrange the Bananas: Place the sliced bananas evenly over the brown sugar mixture, ensuring they cover the entire bottom of the pan. If using nuts, sprinkle them over the bananas.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using).

Prepare the Batter: In a separate large bowl, beat the granulated sugar and eggs together until light and fluffy. Add the buttermilk and mix well. Gradually fold in the dry ingredients until just combined. Be careful not to overmix.

Combine & Bake: Pour the batter over the bananas and smooth the top with a spatula. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Flip: Allow the cake to cool in the pan for about 10 minutes. Carefully run a knife around the edges to loosen it, then invert the cake onto a serving platter. Let it rest until fully cooled.

Serve: Slice and serve warm or at room temperature. This cake pairs beautifully with whipped cream or a scoop of vanilla ice cream!
