Ingredients

  • 1 large cauliflower cut into bite-sized florets
  • 1 cup all-purpose flour for the batter
  • 1 cup unsweetened almond milk or any plant-based milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper for additional heat
  • 1 teaspoon salt to taste
  • 1 cup vegan mayonnaise for the sauce
  • 2 tablespoons sriracha sauce for spiciness
  • 1 tablespoon maple syrup to balance the heat

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  • In a mixing bowl, combine the all-purpose flour, garlic powder, paprika, cayenne pepper, and salt. Gradually whisk in the almond milk until a smooth batter forms.
  • Dip each cauliflower floret into the batter, allowing any excess to drip off, and place them on the prepared baking sheet in a single layer.
  • Bake in the preheated oven for 20-25 minutes, turning halfway through, until the cauliflower is golden brown and crispy.
  • While the cauliflower is baking, prepare the Bang Bang sauce by mixing together the vegan mayonnaise, sriracha sauce, and maple syrup in a small bowl.
  • Once the cauliflower is done baking, remove it from the oven and drizzle with the Bang Bang sauce, tossing to coat evenly.
  • Serve hot, garnished with chopped green onions or sesame seeds, if desired.

Notes

Tip 1: For extra crunch, use panko breadcrumbs in the batter mixture.
Tip 2: Store leftovers in an airtight container in the fridge for up to 3 days.
Variation: Substitute the cauliflower with broccoli florets for a different twist.
