1 pound salmon fillet, skinless and deboned

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 teaspoon sriracha (adjust to taste)

Chopped green onions for garnish

Sesame seeds for garnish

Prepare the Salmon: Cut the salmon fillet into bite-sized pieces, about 1 inch in size. Pat them dry with a paper towel.

    Set Up Breading Station: In one bowl, combine the panko breadcrumbs, garlic powder, onion powder, salt, and pepper. In another bowl, place the all-purpose flour, and in a third bowl, add the beaten egg.

      Bread the Salmon: Dredge each salmon piece in the flour, shaking off excess, then dip into the egg, and finally coat with the panko mixture. Press the breadcrumbs gently to ensure they adhere well.

        Heat the Oil: In a large skillet, heat olive oil over medium heat. Once hot, carefully add the salmon bites in a single layer, ensuring not to overcrowd the skillet.

          Cook the Bites: Fry the salmon bites for about 2-3 minutes on each side, or until they are golden brown and cooked through. Remove them from the skillet and place on a paper towel-lined plate to drain any excess oil.

            Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust the sriracha to your desired spice level.
