Ingredients

  • 1 cup Digestive biscuits crushed into fine crumbs
  • 1/2 cup unsalted butter melted
  • 1 can sweetened condensed milk for toffee filling
  • 2 medium ripe bananas sliced
  • 1 cup heavy whipping cream cold, for topping
  • 2 tablespoons granulated sugar for sweetening the cream
  • 1 teaspoon vanilla extract for flavor
  • 1 tablespoon unsweetened cocoa powder for dusting
  • Chocolate shavings for garnish

Instructions

  • In a mixing bowl, combine the crushed Digestive biscuits with the melted unsalted butter until well combined. Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust.
  • In a saucepan over medium heat, cook the sweetened condensed milk for about 15-20 minutes, stirring constantly until it thickens and becomes a light caramel color. Remove from heat and let it cool slightly.
  • Pour the caramelized condensed milk over the biscuit crust evenly. Layer the sliced bananas on top of the caramel.
  • In a separate bowl, whip the heavy cream with granulated sugar and vanilla extract until soft peaks form. Spread the whipped cream over the bananas, smoothing it out to cover completely.
  • Dust the top with cocoa powder and add chocolate shavings for garnish. Refrigerate the pie for at least 2 hours before serving to allow it to set.

Notes

Tip 1: Use ripe bananas for better flavor and texture.
Tip 2: This pie can be made a day ahead; store it covered in the refrigerator.
Variation: Try adding a layer of peanut butter between the bananas and cream for a twist.
