Ingredients

For the Homemade Dulce de Leche:

1 can (14 oz) sweetened condensed milk

For the Pie:

200g digestive biscuits, crushed

100g unsalted butter, melted

2 large ripe bananas, sliced

300ml heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Dark chocolate shavings (for garnish)

Instructions

Make the Dulce de Leche:

    - Place the unopened can of sweetened condensed milk in a pot and fill it with water until it covers the can by at least an inch.

      - Bring the water to a simmer and cook for 2-3 hours, making sure to top up the water every 30 minutes. Once done, carefully remove the can and let it cool. Open the can to reveal creamy dulce de leche.

        Prepare the Pie Crust:

          - Preheat your oven to 350°F (175°C).

            - In a mixing bowl, combine the crushed digestive biscuits with the melted butter. Mix until well combined.

              - Press the mixture into the base and up the sides of a 9-inch pie dish to form an even crust.

                - Bake for 10 minutes, then allow to cool completely.

                  Assemble the Pie:

                    - Once the crust has cooled, spread a generous layer of the homemade dulce de leche over the base.

                      - Layer the sliced bananas on top of the dulce de leche.

                        - In another bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.

                          - Gently spread or pipe the whipped cream over the bananas to cover the pie.

                            Garnish:

                              - Finish the pie with dark chocolate shavings sprinkled over the whipped cream for an extra treat.

                                Chill & Serve:

                                  - Allow the pie to chill in the refrigerator for at least 1 hour before serving, to let the flavors meld together beautifully.

Prep Time: 15 minutes | Total Time: 3 hours (including chilling) | Servings: 8
