2 cups cooked chicken, shredded

1/2 cup barbecue sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 small red onion, thinly sliced

1 small jalapeño, thinly sliced (optional for extra heat)

1 tablespoon olive oil

1 teaspoon garlic powder

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Prepare the BBQ Chicken Filling: In a medium bowl, mix the shredded chicken with the barbecue sauce, garlic powder, and sliced jalapeño (if using). Stir well to ensure the chicken is fully coated.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread a generous amount of the BBQ chicken mixture on one half of the tortilla. Top with a combination of cheddar and mozzarella cheese, followed by a few slices of red onion. Fold the tortilla over to cover the filling.

      Cook the Quesadillas: In a large skillet, heat the olive oil over medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Flip and cook the other side for another 3-4 minutes until melted and crispy.
