BBQ Meatball Bowls with Avocado Goddess Sauce

1 lb ground beef or ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup BBQ sauce (plus more for drizzling)

2 cups cooked brown rice or quinoa

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

Fresh greens (spinach or arugula) for serving

Avocado Goddess Sauce:

1 ripe avocado

1/4 cup Greek yogurt or dairy-free alternative

1 tablespoon lemon juice

1 clove garlic

1 tablespoon chopped fresh cilantro

1 tablespoon water (to thin out, optional)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs: In a mixing bowl, combine the ground beef or turkey, breadcrumbs, Parmesan cheese, onion, garlic, smoked paprika, salt, and black pepper. Mix until well combined, then form into 1-inch meatballs. Place them on the prepared baking sheet.

      Bake the Meatballs: Bake in the preheated oven for 15-20 minutes or until they are cooked through and golden brown. After 10 minutes of baking, brush the meatballs with BBQ sauce for extra flavor.

        Prepare the Avocado Goddess Sauce: While the meatballs are baking, prepare the sauce. In a blender or food processor, combine the avocado, Greek yogurt, lemon juice, garlic, cilantro, and a pinch of salt and pepper. Blend until smooth. If the sauce is too thick, add a little water to reach your desired consistency.

          Assemble the Bowls: In serving bowls, layer the cooked brown rice or quinoa as the base. Top with the cooked meatballs, corn, diced red bell pepper, and halved cherry tomatoes.

            Drizzle and Serve: Generously drizzle the Avocado Goddess Sauce over the assembled bowls and add a little more BBQ sauce if desired. Top with fresh greens, and enjoy your delicious BBQ Meatball Bowls!
