For the Meatballs:

1 lb ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

2 tbsp chopped fresh parsley (or 1 tbsp dried)

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup BBQ sauce (store-bought or homemade)

For the Avocado Goddess Sauce:

2 ripe avocados

1/4 cup Greek yogurt (or sour cream)

1/4 cup fresh cilantro leaves

2 tbsp lime juice

1 clove garlic

Salt and pepper to taste

Water (for thinning, if needed)

For the Bowl:

2 cups cooked quinoa or rice

1 cup corn (canned, frozen, or fresh)

1 cup cherry tomatoes, halved

1 cup shredded greens (spinach, kale, or mixed greens)

Lime wedges and extra cilantro for garnish

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Make the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan, onion, garlic, egg, parsley, smoked paprika, salt, and pepper. Mix until well combined. Roll the mixture into 1-1.5 inch meatballs and place them on the prepared baking sheet.

Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned.

Prepare the Sauce: While the meatballs are baking, make the Avocado Goddess Sauce. In a food processor, combine the avocados, Greek yogurt, cilantro, lime juice, garlic, salt, and pepper. Blend until smooth, adjusting the consistency with water if necessary. Taste and adjust seasoning as desired.

Assemble the Bowls: In serving bowls, layer the quinoa or rice as the base. Top with cooked meatballs, corn, cherry tomatoes, and greens.

Drizzle and Garnish: Generously drizzle the Avocado Goddess Sauce over the meatball bowls. Garnish with lime wedges and sprigs of cilantro.

Serve and Enjoy: Serve immediately while the meatballs are warm and enjoy your flavorful BBQ Meatball Bowls!
