BBQ PINEAPPLE CHICKEN KABOBS

Ingredients
  

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch chunks

1 bell pepper (red or yellow), cut into 1-inch cubes

1 red onion, cut into quarters and layers separated

1/4 cup soy sauce

1/4 cup barbecue sauce (your favorite brand)

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

Salt and pepper, to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes beforehand)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, barbecue sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper. Add the cubed chicken and toss to coat. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Prep the Vegetables: While the chicken is marinating, prepare the pineapple, bell pepper, and onion. Make sure the pieces are uniform in size for even cooking.

      Assemble the Kabobs: Once marinated, thread the chicken, pineapple, bell pepper, and onion onto skewers alternately until all ingredients are used. Leave a little space between each piece to ensure even grilling.

        Preheat the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

          Grill the Kabobs: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).
