For the Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Chocolate Ganache:

1 cup heavy cream

8 oz high-quality dark chocolate, chopped

2 tablespoons unsalted butter

For Garnish:

Chocolate shavings

Fresh berries (raspberries or strawberries)

Mint leaves (optional)

Instructions
 

Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix the Dry Ingredients: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well-blended.

      Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed for 2 minutes. Carefully stir in the boiling water; the batter will be thin.

        Bake the Cake: Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

          Prepare the Ganache: In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate and butter, stirring until smooth and glossy. Let it cool slightly.

            Assemble the Cake: Once the cake layers are completely cooled, place one layer on a serving plate. Spread a generous amount of ganache on top. Place the second cake layer on top and pour the remaining ganache over the top, allowing it to drip down the sides.

              Garnish: Decorate with chocolate shavings, fresh berries, and mint leaves if desired.
