For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

½ cup sour cream

3 large eggs

1 tsp vanilla extract

2 tbsp all-purpose flour

For the berry swirl:

1 cup mixed berries (strawberries, blueberries, raspberries)

¼ cup granulated sugar

1 tbsp lemon juice

1 tsp cornstarch

Instructions
 

Preheat the oven: Preheat your oven to 325°F (160°C).

    Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.

      Make the berry swirl: In a small saucepan over medium heat, combine the mixed berries, sugar, lemon juice, and cornstarch. Cook until the berries are soft and the mixture starts to thicken (about 5-7 minutes). Remove from heat and set aside to cool.

        Prepare the cheesecake filling: In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the sugar, sour cream, eggs, and vanilla extract, beating until well combined. Add the flour and mix until fully incorporated.

          Assemble the cheesecake: Pour half of the cheesecake filling over the prepared crust. Drizzle half of the berry mixture on top. Use a knife to gently swirl the berry mixture into the cheesecake filling. Pour the remaining cheesecake filling on top and drizzle with the remaining berry mixture, swirling again.

            Bake the cheesecake: Place the springform pan in the preheated oven and bake for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.

              Chill: After cooling at room temperature, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight.

                Serve: Once chilled, carefully remove the springform pan. Slice and serve your delicious berry swirl cheesecake, optionally topped with fresh berries or whipped cream.
