2 ripe bananas, mashed

1 cup plain Greek yogurt

1/3 cup honey or maple syrup

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup chopped walnuts or chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey (or maple syrup), vegetable oil, eggs, and vanilla extract. Stir until all ingredients are well blended.

      In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.

        Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps remaining.

          If desired, fold in the chopped walnuts or chocolate chips for an extra treat.

            Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

              Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
