1 tablespoon lemon juice

Prepare the Fruity Syrup: In a medium saucepan, combine the fruit, sugar, water, and lemon juice. Heat over medium heat and stir until the sugar dissolves and the mixture comes to a gentle boil.

    Once it boils, reduce the heat and let it simmer for about 15-20 minutes, or until the fruit breaks down and the syrup thickens slightly.

      Remove from heat and let cool. Strain the syrup through a fine-mesh sieve to remove any solids and seeds. Store in a glass jar in the refrigerator for up to two weeks.

        Assemble the Italian Cream Soda: In a tall glass, add ice cubes to fill it about halfway. Pour 2-3 tablespoons of your homemade fruity syrup over the ice (or to taste).
