2 tablespoons brown sugar

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon ground black pepper

1 teaspoon sea salt

½ teaspoon cayenne pepper (optional for heat)

1 tablespoon olive oil (for rubbing)

Instructions
 

In a medium bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, dried thyme, dried rosemary, ground black pepper, sea salt, and cayenne pepper (if using). Mix well to ensure all the spices are evenly distributed.

    Pat the pork chops dry with paper towels to ensure a good sear.

      Rub the olive oil over both sides of the pork chops.

        Generously sprinkle the seasoning mix over both sides of the pork chops, pressing gently to adhere.

          Let the seasoned pork chops rest for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).
