Ingredients

1 box of vanilla cake mix (plus ingredients required on the package)

1 cup fresh strawberries, hulled and diced

1 cup strawberry gelatin (Jell-O)

1 cup boiling water

1 cup cold water

1 cup whipped topping (like Cool Whip)

½ cup cream cheese, softened

2 tablespoons powdered sugar

Extra strawberries for garnish

Instructions

Prepare the Cake: Preheat your oven to the temperature specified on the cake mix box. Grease and flour a 9x13-inch baking dish. Prepare the cake batter according to the package instructions and pour the batter into the prepared dish. Bake until a toothpick inserted into the center comes out clean (approximately 25-30 minutes). Let it cool in the pan for about 10 minutes.

Make the Strawberry Gelatin: In a mixing bowl, combine the strawberry gelatin with 1 cup of boiling water. Stir until the gelatin is completely dissolved. Then, add 1 cup of cold water and mix well.

Poke the Cake: After the cake has cooled, use the handle of a wooden spoon or a skewer to poke holes all over the cake (about 1 inch apart). Make sure to poke all the way to the bottom of the cake.

Pour the Gelatin Over the Cake: Carefully pour the prepared strawberry gelatin over the cake, making sure it fills the holes. Refrigerate the cake for at least 2 hours, or until gelatin is set.

Prepare the Topping: In a medium-sized bowl, beat together the softened cream cheese and powdered sugar until smooth. Fold in the whipped topping until well combined.

Frost the Cake: Once the gelatin has set, spread the cream cheese topping evenly over the chilled cake.

Garnish and Serve: Top the cake with extra diced strawberries. Slice and serve chilled. Enjoy your delicious Best Strawberry Poke Cake!
