1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup olive oil

2 tablespoons lemon juice (freshly squeezed)

2 tablespoons Dijon mustard

4 cloves garlic, minced

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

Zest of 1 lemon

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

In a large mixing bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, oregano, thyme, lemon zest, salt, and pepper.

    Add the chicken cubes to the marinade and mix well to ensure all pieces are coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for extra flavor.

      Preheat your grill to medium-high heat.

        While the grill is heating, thread the marinated chicken onto the skewers, leaving a little space between pieces for even cooking.

          Once the grill is hot, place the chicken skewers on it. Cook for about 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F).

            Remove from the grill and let the skewers rest for a few minutes before serving to allow the juices to redistribute.
