Ingredients
  

1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 medium zucchini, diced

1 can (14.5 oz) diced tomatoes with green chilies

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

1 cup corn kernels (fresh, frozen, or canned)

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

    Add minced garlic and continue to sauté for an additional minute until fragrant.

      Increase the heat to medium-high and add the ground beef. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat if needed.

        Stir in the diced bell pepper and zucchini, cooking for another 3-4 minutes until they start to soften.

          Pour in the canned diced tomatoes (with juices), chili powder, paprika, cumin, salt, and pepper. Mix well to combine and let simmer for 5-7 minutes until heated through.

            Add the corn kernels and stir to combine, cooking for an additional 2 minutes.

              Taste and adjust seasoning as necessary.

                Serve hot, garnished with fresh cilantro or parsley and lime wedges on the side.
