Ingredients
  

  • 2 cups birria de res (beef birria) shredded and cooked
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped
  • 1 cup white onion finely chopped
  • 1 cup queso fresco crumbled
  • 1 tablespoon adobo sauce from the birria preparation
  • 2 tablespoons vegetable oil for frying
  • 1 teaspoon dried oregano Mexican oregano preferred
  • 1/2 teaspoon ground cumin for extra flavor
  • salt and pepper to taste

Instructions
 

  • In a skillet over medium heat, add the vegetable oil and heat until shimmering. Add the shredded beef birria and adobo sauce, stirring to combine and heat through for about 5 minutes.
  • Warm the corn tortillas in a separate skillet or on a griddle until pliable, about 1 minute per side. Keep them warm in a clean kitchen towel.
  • To assemble the tacos, place a generous portion of the birria mixture onto each tortilla. Top with chopped cilantro, onions, and crumbled queso fresco.
  • Serve the tacos immediately with lime wedges on the side for squeezing over the top. Optionally, add salsa for extra flavor.

Notes

Tip 1: For extra flavor, dip the tortillas in the birria broth before filling them.
Tip 2: You can make the birria ahead of time and refrigerate it for up to 3 days.
Variation: Try adding avocado slices or pickled jalapeños for added taste and texture.
