1 cup (2 sticks) unsalted butter, melted

1 cup light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup Biscoff spread (plus extra for drizzling)

1/2 cup Biscoff cookies, crushed

Optional: 1/2 cup white chocolate chips

Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Mix the wet ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add in the eggs one by one, mixing well after each addition. Then stir in the vanilla extract.

      Combine dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients into the wet mixture, stirring until just combined.

        Incorporate Biscoff: Gently fold in the Biscoff spread, crushed Biscoff cookies, and white chocolate chips (if using). Be careful not to over-mix; you want it to remain thick and chunky.

          Spread in the pan: Pour the blondie batter into the prepared baking pan, spreading it evenly. If desired, dollop a few spoonfuls of extra Biscoff spread on top and use a knife to create swirls.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

              Cool and cut: Allow the blondies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Once cool, cut them into squares.
