Ingredients
  

1 cup Biscoff cookie crumbs

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (or vegetable oil)

Extra Biscoff cookie crumbs for rolling (optional)

Instructions
 

In a mixing bowl, combine the Biscoff cookie crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined and smooth.

    Chill the mixture in the refrigerator for about 30 minutes to help it firm up.

      Once chilled, scoop out about a tablespoon of the mixture and roll it into a ball between your palms. Place the truffles on a parchment-lined baking sheet.

        In a separate microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

          Dip each truffle into the melted chocolate, ensuring it's completely coated. Use a fork to remove it from the chocolate, allowing any excess to drip off.

            If desired, roll the dipped truffles in extra Biscoff cookie crumbs for added flavor and texture before placing them back on the baking sheet.

              Once all truffles are coated and decorated, refrigerate for at least 30 minutes to set the chocolate.
