2 medium-sized sweet onions

1 cup all-purpose flour

1/2 cup cornstarch

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional for heat)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk

1 large egg

Oil for frying (vegetable or canola)

Dipping sauce of your choice (such as ranch or spicy aioli)

Instructions
 

Prepare the Onions: Peel the onions and trim the tops. Cut the bottom off to create a flat surface, making it easier to stand them upright. Slice each onion into eighths without cutting all the way through, creating 'petals' that can bloom.

    Make the Batter: In a large mixing bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another bowl, whisk together the buttermilk and the egg.

      Heat the Oil: In a deep pot or fryer, heat about 2-3 inches of oil to 350°F (175°C).

        Coat the Onions: Carefully separate the 'petals' of the chopped onions. Dip each onion into the buttermilk mixture, allowing excess to drip off. Then dredge it in the flour mixture, ensuring all parts are well-coated. For extra crunch, repeat the dipping and dredging process.

          Fry the Onions: Once the oil is hot, gently lower the coated onions into the oil. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy. Depending on the size of your pot, you may need to fry them in batches.

            Drain and Serve: Remove the fried onions with a slotted spoon and drain on paper towels. Serve hot with your choice of dipping sauce.
