1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons black peppercorns, coarsely crushed

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece ginger, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 green onions, chopped (for garnish)

Marinate the Beef: In a bowl, combine the thinly sliced beef, soy sauce, oyster sauce, and a tablespoon of crushed black peppercorns. Toss well to coat and let it marinate for at least 30 minutes.

    Prepare the Coating: After marination, sprinkle the cornstarch over the beef, mixing until the pieces are evenly coated. This will help achieve a crispy texture.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Sear the Beef: Add the beef in batches to avoid overcrowding the pan. Sear for about 2-3 minutes until browned and crispy. Remove and set aside.
