2 cups fresh blackberries

1/4 cup granulated sugar

1 teaspoon lemon juice

1 cup heavy whipping cream

1 teaspoon vanilla extract

2 tablespoons powdered sugar

2 teaspoons gelatin powder

3 tablespoons cold water

Fresh mint leaves for garnish (optional)

Prepare the Gelatin: In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes to bloom.

    Make the Blackberry Puree: In a blender, combine the fresh blackberries, granulated sugar, and lemon juice. Blend until smooth. Strain the mixture through a fine-mesh sieve into a bowl to remove the seeds, pressing with a spatula to extract as much juice as possible.

      Dissolve Gelatin: Gently heat the bloomed gelatin in the microwave for 10-15 seconds or in a small saucepan over low heat until fully dissolved. Stir the gelatin into the blackberry puree until well combined. Let it cool slightly.

        Whip the Cream: In a separate mixing bowl, combine the heavy whipping cream, vanilla extract, and powdered sugar. Using an electric mixer, whip until soft peaks form.
