Ingredients
  

4 salmon fillets (about 6 oz each)

2 tbsp paprika

1 tbsp garlic powder

1 tbsp onion powder

1 tsp cayenne pepper (adjust for spice preference)

1 tsp dried thyme

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

1/4 cup unsalted butter

2 tbsp fresh lemon juice

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Blackening Spice: In a small bowl, combine the paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper. Mix well until all ingredients are evenly blended.

    Season the Salmon: Pat the salmon fillets dry with a paper towel. Brush each fillet with olive oil on both sides and then generously coat the top side with the blackening spice mixture. Press gently to ensure it sticks.

      Heat the Pan: In a large cast-iron skillet, heat over medium-high heat until hot. You want the skillet to be very hot for that beautiful char.

        Sear the Salmon: Add the seasoned salmon fillets, skin-side down (if applicable), to the skillet. Cook for 4-5 minutes without moving them until a crispy crust forms. Carefully flip the fillets and cook for an additional 3-4 minutes until cooked through and flaky. Remove the salmon from the skillet and set aside.

          Prepare the Lemon Butter Sauce: In the same skillet, reduce the heat to medium. Add the butter and let it melt, scraping up any bits stuck to the pan. Once melted, stir in the lemon juice and lemon zest, cooking for another minute until the sauce is slightly thickened.

            Serve: Plate the blackened salmon and drizzle the lemon butter sauce generously over the top. Garnish with freshly chopped parsley for a pop of color.
