2 lbs baby potatoes

1/4 cup olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/4 cup sour cream

2 green onions, sliced

Fresh chives for garnish

Instructions
 

Preheat the Blackstone Griddle: Turn on your Blackstone and preheat it to medium heat (around 350°F).

    Boil the Potatoes: In a large pot, add the baby potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes, or until fork-tender. Drain and let them cool slightly.

      Smash the Potatoes: Once the potatoes are cool enough to handle, place them on a baking sheet lined with parchment paper. Gently smash each potato with the bottom of a glass or a fork until it's about 1/2 inch thick.

        Season the Potatoes: In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Brush or drizzle the mixture generously over the smashed potatoes.

          Cook on the Griddle: Place the smashed potatoes directly on the preheated Blackstone griddle. Cook for 5-7 minutes on each side, or until they are crispy and golden brown.

            Add Toppings: Once crispy, sprinkle the shredded cheddar cheese and crumbled bacon over the potatoes. Close the lid of the Blackstone for a minute or two to melt the cheese.

              Serve: Remove the loaded smashed potatoes from the griddle and drizzle with sour cream. Top with sliced green onions and fresh chives for garnish.
