Ingredients

1 cup heavy cream

100g blue cheese, crumbled (like Roquefort or Gorgonzola)

2 tablespoons unsalted butter

1 tablespoon all-purpose flour

1 teaspoon garlic powder

1 teaspoon black pepper

1 tablespoon fresh chives, finely chopped (for garnish)

A squeeze of fresh lemon juice (optional)

Instructions

Prepare the base: In a medium saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk continuously for about 1 minute to create a roux. This will help thicken your sauce.

Add cream: Gradually pour the heavy cream into the saucepan while whisking, ensuring there are no lumps. Continue to cook for about 3-4 minutes, stirring frequently, until the mixture begins to thicken.

Incorporate blue cheese: Reduce the heat to low and add the crumbled blue cheese to the mixture. Stir until the cheese has completely melted and the sauce is smooth and creamy.

Season the sauce: Add the garlic powder and black pepper. Taste the sauce and adjust seasoning as needed. For a touch of acidity, add a squeeze of fresh lemon juice.

Serve: Remove the sauce from heat and let it sit for a minute. Pour over your favorite grilled steak, roasted vegetables, or even pasta. Garnish with fresh chives for a burst of color and flavor.
