Ingredients

2 ripe but firm pears

100g blue cheese (such as Roquefort or Gorgonzola)

50g cream cheese

2 tablespoons honey

1 tablespoon chopped walnuts (optional)

Freshly cracked black pepper, to taste

Fresh arugula or spinach, for garnish

Balsamic glaze (for drizzling)

Instructions

Preheat your oven to 375°F (190°C).

Cut the pears in half lengthwise and scoop out the core using a melon baller or small spoon, creating a cavity for the filling.

In a bowl, mix together the blue cheese, cream cheese, honey, and chopped walnuts until well combined. You can mash the blue cheese slightly for a creamier texture.

Stuff each pear half generously with the blue cheese mixture. Place the stuffed pears cut-side up on a baking sheet lined with parchment paper.

Bake the pears in the preheated oven for 15-20 minutes, or until they are tender and the cheese starts bubbling slightly.

Remove from the oven and let cool for a minute before serving.

Plate the stuffed pears on a bed of arugula or spinach and drizzle with balsamic glaze. Finish with a sprinkle of freshly cracked black pepper for an extra kick.
