Ingredients

For the Blueberry Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup granulated sugar

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk

1 cup fresh or frozen blueberries

For the Lemon Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

A pinch of salt

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to blend the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk and Blueberries: Pour in the buttermilk and gently fold in the blueberries until just combined. Be careful not to overmix.

Shape Biscuits: Turn the dough out onto a floured surface and gently pat it into a rectangle about 1 inch thick. Use a floured biscuit cutter or a glass to cut out biscuits. Re-shape and cut out any scraps to make more biscuits.

Bake: Place the biscuits on the prepared baking sheet, ensuring they are touching slightly for soft sides. Bake for 15-18 minutes or until the tops are golden and a toothpick inserted comes out clean.

Prepare Lemon Glaze: While the biscuits are baking, whisk together the powdered sugar, lemon juice, lemon zest, and a pinch of salt in a medium bowl until smooth and well combined.

Glaze Biscuits: Once the biscuits are out of the oven, allow them to cool for 5 minutes before drizzling the lemon glaze over the warm biscuits.

Serve: Enjoy these delightful blueberry biscuits warm as a perfect breakfast treat or a sweet afternoon snack!
