1 cup fresh blueberries (plus extra for garnish)

2 tablespoons sugar (or to taste)

1 cup sparkling water

1 cup vanilla ice cream

1 cup cream soda

Whipped cream (for topping)

Mint leaves (for garnish, optional)

Instructions
 

In a small saucepan, combine the fresh blueberries and sugar. Heat over medium heat until the blueberries begin to break down and release their juices, about 5 minutes. Stir occasionally to prevent sticking.

    Once the blueberries are soft and syrupy, remove from heat and let cool to room temperature.

      In a tall glass, add a few spoonfuls of the blueberry syrup to the bottom.

        Slowly pour in the sparkling water, mixing gently to combine the blueberry syrup with the water.

          Add a generous scoop of vanilla ice cream on top of the blueberry-sparkling water mixture.
