1 cup fresh blueberries (or 3/4 cup dried blueberries)

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

1/2 cup rolled oats

1/2 cup white chocolate chips

Zest of 1 lemon

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes with a handheld mixer.

        Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract until fully incorporated.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing just until combined.

            Fold in Extras: Gently fold in the rolled oats, blueberries, white chocolate chips, and lemon zest until evenly distributed throughout the dough. Be careful not to mash the blueberries.

              Scoop Cookies: Use a cookie scoop or tablespoon to drop dough balls (about 2 tablespoons each) onto the prepared baking sheet, leaving space between them as they will spread slightly.

                Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden, but the centers are still soft.

                  Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This helps them firm up while still being soft and chewy.
