Ingredients
  

  • 2 cups fresh blueberries washed and stems removed
  • 1 cup fresh lemon juice about 4-6 lemons
  • 1/2 cup agave syrup adjust sweetness to taste
  • 2 cups sparkling water chilled
  • 1 cup ice cubes for serving
  • 1 tablespoon lemon zest freshly grated
  • 1 tablespoon fresh mint leaves for garnish
  • extra blueberries for garnish

Instructions
 

  • In a medium saucepan over medium heat, combine the fresh blueberries and agave syrup. Cook for about 10 minutes, stirring occasionally, until the blueberries have burst and released their juices.
  • Remove the saucepan from heat and let the blueberry mixture cool for a few minutes before straining it through a fine mesh sieve to separate the juice from the solids.
  • In a large pitcher, combine the strained blueberry juice, fresh lemon juice, and lemon zest. Stir well to mix all the flavors together.
  • Slowly add the chilled sparkling water to the pitcher, stirring gently to combine without losing the fizz.
  • Fill glasses with ice cubes, then pour the blueberry lemon mixture over the ice until the glasses are three-quarters full.
  • Garnish each glass with a few whole blueberries and a sprig of fresh mint for a refreshing touch.

Notes

Tip 1: For an extra twist, add a splash of elderflower cordial to the mix for floral notes.
Tip 2: This mocktail can be prepared in advance; just mix the blueberry and lemon juice and add the sparkling water just before serving.
Variation: Substitute lime juice for lemon juice for a different citrus flavor.
