2 cups plain Greek yogurt

1 cup fresh blueberries (or frozen)

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: granola or chopped nuts for topping

Prepare the Blueberry Sauce: In a small saucepan over medium heat, combine the fresh blueberries, honey, lemon juice, and a pinch of salt. Cook until the blueberries start to break down and bubble, about 5-7 minutes. Stir occasionally and mash with a fork to create a chunky sauce. Once thickened slightly, remove from heat and let cool.

    Mix the Yogurt: In a mixing bowl, combine the Greek yogurt and vanilla extract. Stir until well blended and smooth.

      Combine and Swirl: Take about 1/4 of the cooled blueberry sauce and mix it gently into the yogurt (do not fully incorporate—it should be a swirl).

        Fill the Molds: Spoon the yogurt mixture into silicone molds or an ice cube tray, filling each compartment about halfway. Drizzle a bit more of the blueberry sauce on top and use a toothpick or skewer to swirl the sauce into the yogurt.

          Freeze: Place the filled molds in the freezer for at least 4 hours, or until completely solid.

            Serve and Enjoy: Once frozen, carefully remove the yogurt bites from the molds. If desired, you can sprinkle some granola or chopped nuts on top before serving. Enjoy your refreshing and nutritious blueberry yogurt bites!
