Ingredients
  

1 pound potato gnocchi

6 ounces Boursin cheese (garlic & fine herbs)

4 slices of bacon, diced

2 cups broccoli florets

1 cup cherry tomatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi: Boil a pot of salted water. Add the gnocchi and cook according to package instructions until they float to the top. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, about 4-5 minutes. Remove the bacon and let it drain on a paper towel, leaving the rendered fat in the skillet.

      Sauté the Broccoli: In the same skillet with the bacon fat, add the broccoli florets. Sauté for 3-4 minutes until they are bright green and tender-crisp.

        Add Garlic and Tomatoes: Stir in the minced garlic and cherry tomatoes. Cook for another 2-3 minutes until the tomatoes begin to soften.

          Combine Gnocchi and Boursin: Add the cooked gnocchi to the skillet, followed by the Boursin cheese. Stir until the cheese melts and coats the gnocchi and vegetables evenly.

            Season and Serve: Add the crispy bacon back to the skillet, and season with salt and pepper to taste. Toss everything to combine.

              Garnish: Serve warm, garnished with freshly chopped parsley.
