Ingredients
  

  • 1 cup Arborio rice for creamy texture
  • 2 cups low-sodium chicken broth heated
  • 1 cup Boursin cheese any flavor you prefer
  • 2 medium boneless, skinless chicken breasts cubed
  • 1 tablespoon fresh thyme chopped
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 2 tablespoons olive oil for sautéing
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt to taste

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  • Add the cubed chicken to the skillet and cook until browned and cooked through, approximately 6-7 minutes. Season with salt and black pepper.
  • Stir in the Arborio rice and fresh thyme, cooking for an additional 2 minutes until the rice is lightly toasted.
  • Gradually pour in the heated chicken broth, one cup at a time, stirring frequently until the liquid is absorbed and the rice is creamy, about 18-20 minutes.
  • Once the rice is cooked, remove the skillet from heat and stir in the Boursin cheese until fully melted and incorporated.
  • Serve the risotto hot, garnished with additional thyme if desired.

Tip 1: For an extra flavor boost, consider adding sautéed mushrooms or spinach.
