Ingredients
  

  • 12 large cremini mushrooms stems removed and saved
  • 1 package Boursin cheese any flavor variety
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon fresh parsley finely chopped
  • 1/2 teaspoon dried thyme or fresh if available
  • 3 cloves garlic minced
  • 2 tablespoons olive oil for sautéing
  • 1 tablespoon lemon juice freshly squeezed
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper.
  • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped mushroom stems, thyme, salt, and pepper, cooking for an additional 3-4 minutes until softened.
  • In a bowl, mix together the sautéed mushroom mixture, Boursin cheese, grated parmesan, parsley, and lemon juice until well combined.
  • Stuff each mushroom cap generously with the cheese mixture. Place them on the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  • Remove from the oven and let cool slightly before serving. Garnish with additional parsley if desired.

Tip 1: Ensure mushrooms are cleaned gently with a damp cloth to avoid waterlogging.
