Ingredients

8 chicken drumsticks

1/2 cup unsalted butter, melted

1/4 cup brandy

2 tablespoons vanilla extract

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon honey

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a bowl, combine the melted butter, brandy, vanilla extract, minced garlic, thyme, salt, pepper, honey, and lemon zest. Whisk until well blended.

Marinate the Chicken: Place the chicken drumsticks in a large resealable bag or a shallow dish. Pour the marinade over the drumsticks, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

Arrange for Baking: Remove the drumsticks from the marinade and place them on a baking sheet lined with parchment paper or foil. Drizzle any remaining marinade over the drumsticks.

Roast the Chicken: Roast in the preheated oven for 35-40 minutes, turning the drumsticks halfway through, or until they are golden brown and the internal temperature reaches 165°F (74°C).

Garnish and Serve: Remove the drumsticks from the oven and let them rest for a few minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Serve the brandy vanilla butter roasted chicken drumsticks with your favorite side dishes!
