3 medium carrots, peeled and chopped

4 large eggs

1 cup vegetable oil

2 cups all-purpose flour

2 cups granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup milk (optional, for adjusting batter consistency)

For the Chocolate Glaze:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

1 tablespoon unsalted butter

1 teaspoon vanilla extract

Preheat Your Oven: Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan or two 9-inch round cake pans.

    Blend the Carrots: In a blender or food processor, add the chopped carrots and blend until smooth. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, combine the blended carrots, eggs, and vegetable oil. Whisk until well combined.

        Combine Dry Ingredients: In a separate bowl, sift together the flour, sugar, baking powder, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the wet carrot mixture. Gently stir until just combined. If the batter is too thick, add milk as needed for consistency.

            Bake: Pour the batter into the prepared baking pan(s). Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

              Make the Chocolate Glaze: While the cake is cooling, prepare the glaze. In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and stir in the chocolate chips, butter, and vanilla extract until smooth.

                Cool the Cake: Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

                  Glaze the Cake: Once the cake has cooled, pour the chocolate glaze over the top, allowing it to drip down the sides if desired.
