4 large eggs

4 slices of crispy bacon (or turkey bacon for a lighter option)

1 avocado, sliced

1 cup fresh spinach

1/2 cup shredded cheddar cheese

1/4 cup mayonnaise

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh herbs for garnish (optional, such as chives or parsley)

Prepare the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the pan and drain on paper towels. Alternatively, bake the bacon in the oven at 400°F (200°C) for 15-20 minutes.

    Whisk the Eggs: In a medium bowl, whisk together the eggs with a pinch of salt and pepper.

      Cook the Eggs: In the same skillet used for the bacon (or a clean one), reduce the heat to low and pour in the eggs. Cook gently, stirring occasionally until the eggs are just set and fluffy. Remove from heat.

        Mix the Spread: In a small bowl, combine the mayonnaise and Dijon mustard.

          Toast the Croissants: Slice each croissant in half horizontally and place them cut side up on a baking tray. Toast in the oven at 350°F (175°C) for about 5-7 minutes, or until golden and warm.
