4 large flour tortillas

1 cup shredded sharp cheddar cheese

1 cup crumbled feta cheese

6 large eggs

1/2 cup cooked and crumbled breakfast sausage (or diced cooked bacon)

1/2 cup bell peppers, diced (any color)

1/4 cup red onion, finely chopped

1/4 cup fresh spinach, chopped

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil, for greasing the pan

Salsa, sour cream, or avocado for serving

Instructions
 

Prepare the Filling: In a large bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper. Stir in the cooked sausage, bell peppers, red onion, and spinach until well combined.

    Cook the Eggs: Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or olive oil. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are nearly set but still slightly runny (about 3-4 minutes). Remove from heat.

      Assemble Quesadillas: Place a tortilla in the same skillet over medium heat. On one half of the tortilla, layer with a generous amount of shredded cheddar and feta cheeses. Top with a scoop of the cooked egg mixture. Fold the tortilla in half to cover the filling.

        Cook Quesadilla: Cook until the bottom is golden and the cheese has melted, about 3-4 minutes. Flip the quesadilla and cook for another 2-3 minutes, until both sides are golden and crispy. Remove from heat and let it rest for a minute before cutting.

          Repeat: Repeat the process for the remaining tortillas and filling, greasing the skillet as needed.

            Serve: Cut the quesadillas into wedges and serve warm with salsa, sour cream, or avocado on the side.
