Ingredients

For the Snickerdoodle Dough:

1/2 cup unsalted butter

4 oz cream cheese, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon ground cinnamon

1/4 cup granulated sugar (for coating)

For the Cobbler Filling:

2 cups fresh or frozen blueberries (or apple slices for a different twist)

1/4 cup brown sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

Instructions

Brown the Butter: In a medium saucepan over medium heat, melt the 1/2 cup unsalted butter. Continue cooking, stirring frequently, until the butter turns a golden brown color and develops a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.

Prepare the Cream Cheese Mixture: In a large mixing bowl, combine the brown butter, softened cream cheese, and 1 cup of granulated sugar. Beat with an electric mixer on medium speed until well blended and creamy.

Add Wet Ingredients: Mix in the egg and vanilla extract until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Gradually add the dry mixture to the wet mixture, stirring until just combined.

Prepare the Filling: In another bowl, combine the blueberries (or apple slices), brown sugar, lemon juice, and cornstarch. Toss to coat the fruit evenly.

Assemble the Cobbler: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or square baking pan. Spread the fruit mixture evenly on the bottom of the dish, then drop spoonfuls of the snickerdoodle dough over the top, leaving some gaps for the fruit to peep through.

Coat with Cinnamon Sugar: In a small bowl, mix the 1/4 cup granulated sugar with 1 tablespoon ground cinnamon. Sprinkle this mixture generously over the top of the snickerdoodle dough.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the dough comes out clean.

Cool and Serve: Allow the cobbler to cool for about 10 minutes before serving. Enjoy it warm, ideally with a scoop of vanilla ice cream or whipped cream on top!
