1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

2 teaspoons ground cinnamon

For the Cobbler Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

1/3 cup unsalted butter, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

For Serving:

Vanilla ice cream (optional)

Additional ground cinnamon for garnish

Brown the Butter: In a medium saucepan over medium heat, melt the butter. Continue cooking, stirring frequently, until the butter turns a deep golden brown and has a nutty aroma (about 5-7 minutes). Be careful not to burn it. Remove from heat and let it cool slightly.

    Prepare the Snickerdoodle Base: In a large bowl, whisk together the brown butter, granulated sugar, and brown sugar until well combined. Add the eggs and vanilla extract, mixing until smooth.

      Dry Ingredients: In another bowl, whisk together 2 cups flour, cream of tartar, baking soda, salt, and 2 teaspoons of cinnamon. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Set aside.

        Make the Cobbler Topping: In a separate bowl, combine 1 cup flour, 1/2 cup sugar, baking powder, and salt. Stir in the milk, melted butter, and vanilla extract until smooth. Finally, mix in the ground cinnamon.

          Assemble the Cobbler: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. Spread the snickerdoodle batter evenly in the bottom of the dish. Then, spoon the cobbler topping over the batter. Don't worry about covering it entirely; it's fine if some of the snickerdoodle batter shows through.

            Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
