Ingredients
  

  • 1 cup tapioca pearls cooked according to package instructions
  • 1/2 cup brown sugar syrup made by dissolving 1/2 cup brown sugar in 1/2 cup water
  • 2 cups fresh lemon juice about 8-10 lemons, freshly squeezed
  • 4 cups cold water or sparkling water for a fizzy version
  • 1/4 cup simple syrup adjust to taste
  • 1 teaspoon vanilla extract for added flavor
  • 1/2 cup ice cubes for serving

Instructions
 

  • Cook the tapioca pearls according to package instructions, usually boiling them for about 25 minutes until they are soft and chewy. Drain and rinse under cold water to stop the cooking process.
  • In a small saucepan, combine 1/2 cup of brown sugar and 1/2 cup of water. Heat over medium-low heat, stirring until the sugar is fully dissolved. Allow it to cool before using.
  • In a large pitcher, mix the fresh lemon juice and cold water (or sparkling water). Adjust sweetness with the simple syrup, adding more or less to taste.
  • To assemble, place a portion of the cooked tapioca pearls in each glass. Pour the lemonade mixture over the pearls, filling the glass about 3/4 full.
  • Drizzle the brown sugar syrup over the top of the lemonade in each glass for a beautiful presentation and added flavor.
  • Add ice cubes to each glass, garnish with lemon slices, and serve with a wide straw to enjoy the boba!

Notes

Tip 1: For a richer flavor, let the brown sugar syrup sit overnight before using.
Tip 2: Store leftover tapioca pearls in water at room temperature for up to 4 hours, as refrigeration can make them hard.
