Instructions

Prepare the Cake Batter:

    - Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

      - In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

        - Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

          - In a separate bowl, whisk together flour, baking powder, and salt.

            - Gradually add the dry ingredients to the wet mixture, alternating with whole milk. Begin and end with the dry ingredients, mixing until just combined.

              Bake the Cakes:

                - Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

                  - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                    Make the Peach Filling:

                      - In a saucepan over medium heat, combine the diced peaches, granulated sugar, lemon juice, and cornstarch. Cook for about 5-7 minutes, stirring gently until the peaches are softened and the mixture thickens.

                        - Remove from heat, stir in the vanilla extract, and let it cool completely.

                          Prepare the Frosting:

                            - In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing on low speed.

                              - Add heavy cream, vanilla extract, and a pinch of salt. Beat on high until light and fluffy. Adjust the consistency with more cream or powdered sugar as needed.

                                Assemble the Cake:

                                  - Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of peach filling on top.

                                    - Place the second layer on top and repeat the filling process. Add the third layer on top.

                                      - Frost the entire cake with the prepared frosting, smoothing it out with a spatula. Decorate with any leftover peach filling or fresh peach slices if desired.

                                        Serve:

                                          - Slice the cake and serve it chilled or at room temperature. Enjoy the sweet layers of brown sugar cake with the delightful peach filling!
