Ingredients
  

4 boneless, skinless chicken breasts

1 cup brown sugar

1 cup pineapple juice (fresh or canned)

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon minced garlic

1 tablespoon minced fresh ginger

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

1 cup fresh pineapple chunks

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a bowl, mix together the brown sugar, pineapple juice, soy sauce, rice vinegar, garlic, ginger, black pepper, and red pepper flakes. Reserve 1/4 cup of the marinade for later use. Place the chicken breasts in a zip-top bag or a shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Bake the Chicken: Remove the chicken from the marinade and place it in a baking dish. Pour the reserved marinade over the chicken and top it with pineapple chunks. Cover the dish with aluminum foil and bake for 25 minutes.

        Caramelize the Sauce: After 25 minutes, remove the foil and bake for an additional 15 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C). This will also help to caramelize the sauce.

          Garnish and Serve: Once cooked, remove the chicken from the oven and let it rest for a few minutes. Slice the chicken and serve it over a bed of cooked rice or quinoa, drizzling the pan sauce on top. Garnish with sliced green onions and sesame seeds.
