1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup pop tart filling (your choice of flavor)

1/2 cup sprinkles (optional)

1 cup powdered sugar (for icing)

2-3 tablespoons milk (for icing)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Make the Cookie Dough: In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes.

      Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.

          Incorporate Sprinkles: If you’re using sprinkles, fold them into the dough at this point for added color and crunch.

            Form Cookies: Using a cookie scoop or tablespoon, scoop out the dough and flatten it into discs about 1/4 inch thick. Place half of the discs on the prepared baking sheet, ensuring they have enough space to spread.

              Add Filling: Spoon about 1 teaspoon of your chosen pop tart filling onto the center of each disc, then place another disc on top to create a sandwich. Press the edges gently to seal.

                Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

                  Cool the Cookies: Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
