1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

1/2 cup chopped nuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.

      Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract and continue to mix.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

          Mix Dry Ingredients into Wet: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.

            Fold in Chocolate Chips and Nuts: Gently fold in the chocolate chips and chopped nuts using a spatula.

              Chill the Dough: Divide the dough into two equal parts, flatten each into a disk, and wrap in plastic wrap. Chill in the refrigerator for at least 30 minutes (or longer for easier rolling).

                Roll Out the Dough: Lightly flour your work surface, and roll out one disk of dough to about 1/4 inch thick. Use cookie cutters to create shapes and place them on the prepared baking sheets.

                  Bake: Bake in the preheated oven for 10-12 minutes or until the edges are slightly firm but the centers are still soft. Do not overbake; cookies will continue to firm up as they cool.

                    Cool and Enjoy: Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
