Ingredients
  

  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup Frank's RedHot sauce for authentic buffalo flavor
  • 1 tablespoon unsalted butter melted
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 2 cups brown rice cooked according to package instructions
  • 1 cup shredded cheddar cheese for topping
  • 1 cup green onions sliced for garnish
  • 1 cup celery sticks chopped, for crunch
  • 1 cup ranch dressing for drizzling and flavor

Instructions
 

  • In a large skillet over medium heat, melt the butter and add the chicken pieces. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink in the center.
  • Once cooked, add the Frank's RedHot sauce, smoked paprika, garlic powder, salt, and pepper to the skillet. Stir well to coat the chicken evenly and cook for another 3-5 minutes until the sauce thickens slightly.
  • While the chicken is cooking, prepare the brown rice according to package instructions. Once done, fluff with a fork and set aside.
  • To assemble the bowls, divide the cooked rice among 4 meal prep containers, then top each with an equal portion of the buffalo chicken mixture.
  • Sprinkle shredded cheddar cheese over each bowl and add chopped celery sticks and sliced green onions as toppings.
  • Finally, drizzle ranch dressing over the top of each bowl before sealing the containers. Store in the refrigerator for up to 4 days.

Notes

Tip 1: For added flavor, marinate the chicken in the hot sauce for 30 minutes before cooking.
Tip 2: These bowls can be frozen; just add the dressing after reheating.
Variation: Swap out brown rice for quinoa or cauliflower rice for a low-carb option.
